Outside influences in the country have had profound effects on common political beliefs, social interactions, and of course, the food. Norma Listman and Saqib Keval’s restaurant Masala y Maíz in Mexico City celebrates this intersection of culinary traditions while exhaustively researching regional ingredients.

From esquites and gorditas to patra and uttapam, the dishes on the restaurant’s menu respect the origins of each recipe, even while sourcing regional ingredients, many of them cultivated at chinampas in the Xochimilco District. The gordita, for example, is a typical circular tortilla, deep fried, served with refried beans and chicken breast with green masala mole that’s topped with a quail egg.
